Thai Shrimp Soup
Recipe:
6 cups of water
8 cups of low sodium chicken broth or chicken stock
2lbs of shrimp
8 oz of stir fry rice noodles
2 cups of shiitaki mushrooms
3 cups bok choy
1/2 cup of shallots
6-8 scallions
1 tablespoon of sesame oil or olive oil
1/2 cup soy sauce
Salt and pepper to taste
Cilantro, mung bean sprouts and carrot shavings for garnish
2-3 anise stars
1/4 teaspoon of crushed red pepper
* I like to saute the mushrooms and shallots before adding all the other ingredients
